Pickled…aka fermented red onions are so easy to make and they elevate any dish that you add them to.

Fermented foods are a natural probiotic and therefore a great addition to your diet to support gut health. Apple Cider Vinegar (ACV) which is used in the pickling process contains acetic acid and it has been linked to weight loss, improved digestion, and better blood sugar control. Pickled onions are a great way to add a tangy and slightly sweet taste to your dishes without a lot of additional calories or sodium.

Anytime you open my fridge chances are good that you will see a jar of red onions waiting to be added to sandwiches, eggs, salads, tacos, poke bowls and more!

Note: I like to store my picked red onions is a Weck 1 liter jar that can be ordered from Amazon.

Fun Fact: Red onions contain a pigment called anthocyanin, also found in blueberries and red cabbage, it is why they are red/purple in color. It is also a powerful antioxidant. In addition, the pungent flavor and odor of a red onion is from their high sulfur content, which has anti-inflammatory and anti-cancer properties.

Pickled Red Onions

Pickled red onions are one of the easiest and tastiest "ferments" to make. There is always a jar in the fridge ready for me to add the tasty onions to many different types of dishes from salads to poke bowls. Great recipe for a beginner that wants to explore pickled or fermented foods.

Equipment

  • 1 Liter size glass jar

Ingredients
  

  • 1 med Red Onion I prefer organic, but since onions are naturally resistant to pest they usually are not doused in pesticides so you could get regular.
  • 1 cup Apple Cider Vinegar I prefer Bragg's Organic.
  • 4 tbsp Coconut Sugar You could use regular sugar, but I like the taste of coconut sugar
  • 1 tbsp Himalayan salt
  • 2 cups Hot water I use filtered water that is free of contaminants and taste better.

Instructions
 

  • Peel and slice the red onion as thin as possible. Separate the onion rings and place in the jar.

  • Mix together Apple Cider Vinegar with the coconut sugar and Himalayan salt. Pour the boiled water over the mixture and stir until sugar and salt are dissolved.
    1 cup Apple Cider Vinegar, 1 tbsp Himalayan salt, 2 cups Hot water, 4 tbsp Coconut Sugar
    Pour boiled water over the apple cider vinegar, coconut sugar and salt
  • Pour over the onions in jar. Make sure all onions are submerged. Allow it to sit for at least one hour before using.

  • Cover and keep in refrigerator for up to three weeks.
    Make sure all the onions are submerged.
